4 medium sized squids, cleaned (reserve head, fins and the tentacles)
2 medium sized onions
3-4 garlic cloves
1 inch ginger
2 green chillies
Chilli powder- ¼
Turmeric- a pinch
Garam masala- ¼ tsp
Marinate reserved parts of the squid except head in chilli powder and salt.
Shallow fry and set aside.
In the same oil, sauté onions until tender.
Add curry leaves, green chillies, ginger and garlic, and fry until the raw smell goes away.
Add Garam masala, chilli powder, turmeric powder, salt, coriander leaves and fried squid parts.
Cover and simmer for 5 minutes.
Assembling and Steaming:
Fill half of each squid with prepared masala.
Do not excessively fill them, as they tend to shrink once they begin to cook.
Place the head back and seal the opening with a toothpick. Steam for 15-20 minutes.
Set aside to cool a little. Marinate with chilli powder and salt.
Shallow fry for few minutes just to give the squid a coat.
Serve hot with and rice of your choice.
